You use a SAN just as you would use any disk installed in a server.  Map a drive letter to it, create shares, folders, create different partitions and RAID arrays - configure and use it how you want.

So say you have a library of video film, you can store this on an Assureon appliance indefinitely.  It is safe, encrypted, and completely untamperable, and un-deletable.

Now you may only want to keep such files for 3 years.  At 3 years and 1 day you wish these files to be erased.  Using easily creatable policies, you can create a rule which delete these videos automatically.
